raw vegan cheesy kale chips

these make such a great, healthy snack food. it’s like eating popcorn.

bunch of kale
nutritional yeast
sesame seeds
tiniest bit of salt imaginable

wash kale just prior to making; the dampness will help the seasonings stick to the leaves.

tear up the kale into potato chip-sized pieces.

the way i see it, there are at least two good ways to add the seasonings: mix the yeast and sesame seeds together in a bowl and toss it with kale, or lay the kale out on dehydrator trays and sprinkle the seasonings on top. i took the latter approach.

it is very, very easy to use too much salt on these. i made kale chips in the oven a while ago and added what i thought was a reasonable amount of salt, but it was overwhelming. this time i basically just showed them the salt grinder and that was enough.

my kale chips only took about 3 hours to dehydrate at 105 degrees, but since there are a lot of variables with dehydrators i think it’s probably good to start checking them periodically after two hours and remove them when they’re dry and crispy.
